Uncertainty Principle No. 2 - A 2 year barrel aged golden sour in 3rd use whisky barrels. It has a blend of different yeasts including Brett D and St. Remy Abbey blend. A small amount of Uncertainty Principle No. 1 was blended in, and then aged the whole thing on Niagara Sour Montmorency cherries for an additional 4 weeks to achieve a uniquely complex and delicious character.
Uncertainty Principle No. 3 - A selection of Niagara wine barrels were filled with a mixture of Flanders Red and Brown ales, and aged for 2 years in the Nickel Brook barrel house. After allowing the brew to mature in barrels, the brewers later blended in Niagara Peaches and wild yeasts.
Uncertainty Principle No. 4 - Chardonnay barrel-aged golden sour matured on cranberries and golden berries.
Raspberry Uber - A light and colourful Sour Wheat Beer with a delicious fruity twist on a traditional Berliner style Weisse, loaded with a ton of raspberries.
Peach Uber - Loads of fresh peach puree were added in a traditional Berliner style Weisse.
Pineapple Uber - With the addition of loads of fresh Pineapple puree, this beer explodes with bright tropical fruit notes on the nose, and pleasant pineapple backbone.
Cucumber & Lime Gose - This unique brew is a tribute to fresh and natural. Combining sea salt, and cold-pressed cucumber and lime juice creates the perfect thirst-quenching beer.
Bastardized: Apricots - This sessionable summer stout brings lovely roasted and dark malt notes and a hint of espresso, then fuses them with the bright nectar of fresh apricots and lemon.
Winner! Gagnant! A brew that's rustic, a little funky, and chock full of cherries. Made with tart and juicy Niagara Montmorency cherries, earthy Morello cherries and sweet dried Montmorency cherries, Winner! Gagnant! is a real treat for any cherry fan.
Subtle Blend Raspberry - A blend of mature, barrel-aged beers refermented with Viva Farms raspberries and keg conditioned with skagit blackberry honey.
The Fruitful Barrel: Tayberries & Cherrries - A blend of barrel-aged beer refermented with fresh Skagit Valley tayberries, barrel-aged beer refermented with NY242 cherries from the WSU Mount Vernon research orchard, and a small amount of additional barrel-aged beer, naturally conditioned with blackberry honey from The Valley’s Buzz.
Garden Paths Led To Flowered- Hoppy Blonde Ale fermented with native yeast in an open foudre, blended, dry-hopped, and keg-conditioned with skagit blackberry Honey.
Welcome Wagon - A wild golden ale lightly hopped with Mandarina Bavaria hops then refermented over a blend of four varieties of pressed cider apple in collaboration with E.Z. Orchards (Salem, OR).
Past Tense - An open-cooled barrel-aged wild golden ale blended with a barrel-aged farmhouse pale ale. An expressive balance of oak, acid, estate-grown malts, and the delicate microflora of the Klickitat Valley. Brewed in collaboration with Varietal Beer Company (Sunnyside, WA).
Levelheaded - A mixed-culture, barrel-aged golden ale hopped with El Dorado, Azacca, and Citra. Soft malts, tropical hops, and a wild interplay of delicate funk are balanced by a lively acidity.
Fool’s Gold (Wild Lager) - A pilsner aged in freshly dumped Viognier barrels with a blend of wild yeast and refermented on Viognier must. A smooth, biscuity pale lager with a subtle fruit character, a delicate acidity, and a touch of funk. Brewed in collaboration with Backwoods Brewing Co.
High Spirits - A French-inspired amber ale aged in wine barrels alongside Montmorency cherries from Hood River, OR. This special beer has a rich maltiness, spicy hop character, brandy-like delicateness, and dry finish.
